Born out of Todd Schulte’s soup delivery service, Happy Soup Eater, Happy Gillis is a charming neighborhood café that brings freshly made sandwiches, soups, and breakfast items to hungry Kansas Citians.

Soup selections are rotated throughout the week while a small team of dedicated and knowledgeable chefs construct sandwiches that stand alone or make a hearty accompaniment to a bowl of soup. Artisan breads and savory fillings merge to create combinations such as the Vietnamese-inspired bahn mi (cilantro lovers, this is for you!).

Early birds can fuel up at breakfast with egg sandwiches, a bialy with cream cheese, or an order of biscuits and gravy, hailed by many as the best in town.
