Flávia Quaresma is one of Brazil [1]’s most renowned chefs, and if you want to see what all the fuss is about head to her latest eatery, Carême (Rua Visconde de Caravelas [2] 113, Botafogo, tel. 21/2537-2274, R$45–55), a cozy little Parisian-style bistro with a small number of daily specials written on a blackboard (along with the weather conditions in Paris). Classics such as a filet mignon in red wine sauce served with golden potatoes, mushrooms, bacon, and onions share menu space with more unusual recipes such as roasted lamb in a cocoa pepper sauce served on polenta.
