For the ultimate in sushi—even diehard fans from Tokyo are impressed—be sure to make reservations for a meal at Nishino (3130 E. Madison St., 206/322-5800, www.nishinorestaurant.com , 5:30–10:30 p.m. Mon.–Sat., 10:30 a.m.–9:30 p.m. Sun., $25). It’s a busy and sometimes-noisy place, but the food is impeccable and perfectly prepared. For a real treat, request the chef’s menu (a fixed-price six-course meal, $60) when you reserve a table. Nishino is expensive, but worth every dollar.
