Original owner Ann Cashion, co-owner of Johnny’s Half Shell [2] on Capitol Hill, opened Cashion’s in 1995 with the goal of creating a friendly neighborhood eatery that serves anything-but-ordinary cuisine.
Today, chef John Manolatos has kept that goal, adding a few dishes that hint at his own Greek ancestry but preserving an overall menu of contemporary American with subtle Southern touches and keeping the funky decor, which features family photos of the restaurant’s employees as well as reclaimed windows and drapes.
Recent popular menu choices include a goose egg with ramp appetizer, bison hanger steak served with spicy kale, and spit-roasted goat. Cashion’s is a popular local brunch spot as well, featuring a filling array of breakfast and lunch choices.
