Cozy Veritas seats just 50 people in its exposed brick and burgundy interior, attracting customers with a wine list of 70 by the glass, nearly 200 bottles, and flights: half-glass tastings that center on a theme such as “backpacking in Italy” or “Lewis and Clark,” with wines of Washington State.

A few flights include the same varietal from different places—an adventure for the palate that demonstrates how differences in climate and soil affect a grape.

Food offerings are mainly limited to appetizers that complement the vino, including cheese boards, charcuterie, dips, and chocolates.
