For fresh fish and seafood without a hefty dose of eco-guilt, Hook offers a menu entirely based on sustainable ingredients—items that have not been overfished or are in danger of disappearing from the planet—which means the chef cooks up some things the average seafood lover may not have tried before, including wahoo, weakfish, bluefish, and rockfish (which has rebounded thanks to aggressive protection measures in Chesapeake Bay in the past 20 years).
But old standards also make their way onto the menu, including lobster, oysters, and clams, served up in a modern white dining room with barrel-vaulted ceiling. A guide is delivered with the check to help patrons continue making sustainable dining choices when eating seafood.
