One of the most surprising restaurants on St. Thomas, Randy’s Bar and Bistro (Al Cohen’s Plaza, 340/775-5001, 11 a.m.–3 p.m. and 5:30–10 p.m. Mon.–Sat., $12–37) is a gourmand’s delight tucked into a commercial storefront at the top of Raphune Hill. Happy hour is popular here—especially among martini fans—and many drinkers migrate to the tables set amid wine crates for meals of roasted lamb, fresh salmon, mussels, and more. Lunch is more casual and more affordable.
