Knoxville’s best restaurant for vegetarians is the Sunspot (1909 Cumberland Ave., 865/637-4663, Mon.–Sat. 11 a.m.–10 p.m., Sun. 10:30 a.m.–3 p.m., $8–14), an institution on the UT strip that features eclectic cuisine with strong Southwestern and Latin American influences.
For vegetarians there is the baked enchilada, the Tofu Tier (a stack of baked tofu and fried eggplant in a savory miso sauce), and an awesome veggie burger. Carnivores have options like pan-seared tilapia served over cheese grits and Pasta Rustica, chorizo sausage and red peppers served in a spicy tomato sauce. There are dozens of beers on tap and in the bottle.
