Portland is rich in neighborhood Vietnamese restaurants, but Silk (1012 NW Glisan St., 503/248-2172, www.silkbyphovan.com, 11 a.m.–3 p.m. and 5–10 p.m. Mon.–Sat., $8–22) is one of the first to raise the subtle cuisine of Vietnam to fine dining. Located in the heart of the Pearl District, Silk is the gem of the local Pho Van restaurant chain. It is a highly recommended, upscale establishment that offers a reinterpretation of traditional Vietnamese cooking that’s sophisticated and elegant yet earthy and full-flavored.
