Paraense Sofia Bendelak studied biology and worked in fashion before deciding to become a chef. Fascinated with the Amazon’s edible bounty, she moved to Manaus and opened
Bistrô Ananã (Travessa Padre Ghisland 132, Centro tel. 92/3234-0056, 7:30 p.m.–12:30 a.m. Fri.–Sat., R$22–35), where she has taken regional cuisine to new contemporary heights. Constant experimentation yields inspired creations such as gazpacho made with green açai, crunchy tapiocas filled with pâté of smoked pirarucu, and duck cannelloni in a taperaba sauce.
The carefully presented dishes are complemented by a modern decor featuring lots of warm natural woods and soft lighting, and soothing strands of bossa nova in the background.
