Roberta Sudbrack (Av. Lineu de Paula Machado 916, Jardim Botânico, tel. 21/3847-0139, 7:30 a.m.–midnight Tues.–Sat., noon–3 p.m. Thurs.–Fri., www.robertasubrack.com.br, R$85–100) is considered one of Brazil’s most inventive contemporary chefs, whose culinary creations are a feast for the senses. Self-taught, Sudbrack went from operating a hot dog stand in Brasília to becoming presidential chef during the tenure of Fernando Henrique Cardoso.

Her casually tasteful Jardim Botânico restaurant features two floors; the upstairs is dominated by a single, long 18-person dining table where strangers can bond over innovative concoctions such as langoustine with pistachio milk and roasted pork with potato chantilly. In order to take advantage of the freshest ingredients, the menu changes daily.
